Properly sized subterranean grease interceptors are required for ALL RESTAURANTS during change of ownership, remodel or new establishment.
You will be required to install a grease interceptor for your restaurant unless you are granted an exemption from Water Quality. An exemption is a memo signed by David Shissler, Director of Water Quality, which specifically approves the grease control plan. To apply for the exemption, you must prove to the City that you will not introduce grease into the sewer system.
The burden of proof is on you, so take some time to sort out all of your plans for grease control and write a letter detailing the specifics. Only then will the exemption be considered.
The preferred alternative will always be the installation of a properly sized subterranean grease interceptor.
Minimum contents of a grease interceptor exemption request letter:
1) Is there space on the premises to install a 1000 gallon subterranean grease interceptor?
2) What is the proposed menu?
3) How many deep fryers are in the kitchen?
4) How many hoods are in the kitchen? How will they be cleaned?
5) Is there a food grinder in any sink?
6) What is the plan for dishwashing?
7) What is the plan for washing cooking equipment?
8) What is the plan for food waste?
9) What will each sink be used for?
10) Where does mop water go?
11) What is the plan for washing kitchen mats?
12) What is the grease control plan?
13) What service will be removing the grease? How often?
14) What equipment (grease traps, etc.) will be installed instead of a grease interceptor? Where? How many? Include product cut sheets.
15) What other measures will be taken to keep grease out of the drains?
16) Include any additional relevant information and documentation.
